Salmon Burgers

Makes 2 Patties
12 oz Salmon, minced
1 tbsp Dijon mustard
Lemon zest & juiced
1 scallion sliced
Salt & Pepper
Pinch of cayenne
Pinch of paprika
2 cloves garlic, microplaned
1 tbsp shallot minced
1 tsp chopped chives
½ tsp dried dill
2 brioche buns
4 leaves of lettuce
4 slices of tomato
2 slices of onion

Salmon Burger Sauce
4 tbsp mayo
¼ tsp Dijon mustard
½ tsp old bay seasoning
1 clove garlic microplaned
1 tbsp pickle minced
¼ tsp dried dill

Directions:

1. In a mixing bowl add the chopped salmon, Dijon mustard, lemon zest & juice, sliced scallions, salt and pepper, cayenne, paprika, garlic, shallot, chives, and dill. Mix all together until well combined. Portion into two patties, preheat a skillet on medium heat and sear the patties for 4-5 minutes a side.

2. In another smaller mixing bowl whisk, all the ingredients for the burger sauce and set aside until the salmon burgers are done.

3. Build the burgers on the toasted brioche bun, sauce both side of the bread, the patty goes in the bottom, garnish it with lettuce, tomato, and onion.

4. Enjoy!
