Peach & Basil Cobbler

Serves: 4 

Ingredients:
4 ripe peaches, sliced
4 large basil leaves, chiffonade
1 lemon, zested
Pinch of salt
½ tbsp organic cane sugar
Pinch of nutmeg

Topping:
2 oz slivered almonds
1/3 cup packed brown sugar
¼ cup + 2 tbsp flour
Pinch of salt
3 tbsp cold unsalted butter

Directions:

1. Pre-heat oven to 350 F. In a mixing bowl gently fold together the sliced peaches, basil, lemon zest, pinch of salt, cane sugar, and pinch of nutmeg. 

2. Take a small casserole dish and spray with a non-stick spray and pour the peach mixture in the dish. 

3. In a separate bowl add the slivered almonds, packed brown sugar, flour, and salt. Cut in the cold unsalted butter into the dough and sprinkle the mixture on top of the peaches. 

4. Bake in the oven for 25 minutes or until golden brown and bubbly.
