Kicked Up Zucchini & Corn Fritters

What you need:
2 medium zucchini (shredded)
1/2 tsp kosher salt
1 tbsp avocado oil
1 large shallot minced
3 cloves garlic, microplained
2 ears of corn (cut kernels off cobb)
1/2 cup corn meal
1/2 cup flour (I used gluten free)
1/4 tsp baking soda
Black pepper & Salt to taste
3/4 cup buttermilk
1 chopped chipotle.

Sauce:
1 cup Greek yogurt
2 tsp adobo sauce
1 zested lime
2 cloves of garlic microplained
2 likes juiced
2 tbsp chopped cilantro
1/2 tsp cumin
